Spinach Gratin

  • 2 tablespoons olive oil
  • 1/2 cup minced onion
  • Salt
  • Freshly ground black pepper
  • 1 large clove garlic, minced
  • 6 cups fresh baby spinach
  • 1/2 cup Dannon Oikos Plain Greek Nonfat Yogurt
  • 1/3 cup + 1/4 cup parmesan cheese
  • 1/4 cup panko breadcrumbs


  1. Heat a medium sauté pan over medium heat. When the pan is hot, add the olive oil along with the onion and garlic with a pinch of salt.
  2. Cook for 3 minutes, then add all of the spinach. Cook for an additional minute until the spinach had wilted slightly then reduce the heat to low.
  3. Stir in the Dannon Oikos Plain Greek Nonfat Yogurt and parmesan and give it a taste here, adding additional salt and freshly ground black pepper as needed.
  4. Sprinkle the breadcrumbs in an even layer over the top followed by the remaining parmesan.
  5. Place under a broiler on the low setting and cook for an additional 8-10 minutes, until the top is golden brown.
